The solid phase microextraction (SPME) has been the most used technique for the extraction of volatile compounds from rice because of its easy operation and solvent-free. The extraction parameters, sample mass and incubation temperature, were optimized through a central composite rotational design (CCRD), aiming at maximizing the extraction of 2-acetyl-1-pyrroline (2AP), the main compound responsible for the aroma in aromatic rice, and minimizing the generation of hexanal, a marker of lipid oxidation. Besides, the time of sample incubation and fiber exposure for the extraction of the volatile compounds from rice were determined. The optimized conditions for SPME were: 2.5 g of ground rice in a 20 mL vial, sample incubation at 80 C for 60 min and exposure of the divinylbenzene/carboxene/polydimethylsiloxane (DVB/CAR/PDMS) fiber in the headspace for 10 min. The optimized method was sucessfuly applied to 12 varieties of rice and principal component analysis (PCA) was performed to observe similarities in their volatile profile. A total of 152 volatile compounds were identified among the different rice varieties. From these, 42 were identified in arborio rice, 47 in basmati brand A, 43 in basmati brand B, 55 in black rice, 63 in brown rice, 39 in jamine rice, 50 in parboiled brown rice, 43 in parboiled rice, 54 in red rice, 63 in sasanishiki rice, 46 in white rice and 70 in wild rice.

The changes in volatile compounds related to roasting conditions were monitored using comprehensive gas chromatography-mass spectrometry (GC × GC-ToFMS), and the key odorants for the non-roasted and roasted seeds oils were determined by gas chromatography-olfactometry (GC-O). The most important compounds determining the flavour of oils obtained from the roasted seeds were dimethyl sulphide, dimethyltrisulfide, 2,3-diethyl-5-methylpyrazine, 2,3-butenedione, octanal, 3-isopropyl-2-methoxypyrazine and phenylacetaldehyde. For the oils obtained from the non-roasted seeds, the dominant compounds were dimethylsulfide, hexanal and octanal. Based on GC × GC-ToFMS and principal component analysis (PCA) of the data, several compounds were identified that were associated with roasting at the highest temperatures regardless of the rapeseed variety: these were, among others, methyl ketones (2-hexanone, 2-heptanone and 2-octanone).

A simultaneous multiple solid-phase microextraction-single shot-gas chromatography mass spectrometry (smSPME-ss-GC/MS) method has been developed for headspace analysis. Up to four fibers (50/30mum DVB/CAR/PDMS) were used simultaneously for the extraction of aroma components from the headspace of a single sample chamber in order to increase sensitivity of aroma extraction. To avoid peak broadening and to maximize resolution, a simple cryofocusing technique was adopted during sequential thermal desorption of multiple SPME fibers prior to a ‘single shot’ chromatographic run. The method was developed and validated on a model flavor mixture, containing 81 known pure components. With the conditions of 10min of incubation and 30min of extraction at 50C, single, dual, triple and quadruple SPME extractions were compared. The increase in total peak area with increase in the number of fibers showed good linearity (R2=0.9917) and the mean precision was 12.0% (RSD) for the total peak sum, with quadruple simultaneous SPME extraction. Using a real sample such as commercial coffee granules, aroma profile analysis was conducted using single, dual, triple and quadruple SPME fibers. The increase in total peak intensity again showed good linearity with increase in the number of SPME fibers used (R2=0.9992) and the precision of quadruple SPME extraction was 9.9% (RSD) for the total peak sum.

The aim of this study was to investigate the aroma and sensory profiles of various types of peaches (Prunus persica L. Batsch.). Forty-three commercial cultivars comprising peaches, flat peaches, nectarines, and canning peaches (pavias) were grown over two consecutive harvest years. Fruits were assessed for chemical aroma and sensory profiles. Chemical aroma profile was obtained by proton transfer reaction-mass spectrometry (PTR-MS) and spectral masses were tentatively identified with PTR-Time of Flight-MS (PTR-Tof-MS). Sensory analysis was performed at commercial maturity considering seven aroma/flavor attributes. The four types of peaches showed both distinct chemical aroma and sensory profiles. Flat peaches and canning peaches showed most distinct patterns according to discriminant analysis. The sensory data were related to the volatile compounds by partial least square regression. gamma-Hexalactone, gamma-octalactone, hotrienol, acetic acid and ethyl acetate correlated positively, and benzeneacetaldehyde, trimethylbenzene and acetaldehyde negatively to the intensities of aroma and ripe fruit sensory scores.

The low concentration of terpene hydrocarbons of the lemon juices clarified using membranes of 100,000. Da and 0.45 mum made them ideal as acidulant agents in fruit preservation. On the other hand, the CLJ obtained using a membrane of 0.2 mum of pore size, with high recuperation percentages for terpene hydrocarbons (e.g. limonene) and aldehydes (neral and geranial), made this juice ideal for applications in which a lemon flavor is needed. One of the main results of this work lies in the fact that certain compounds reduce their concentration in a large percentage during the cross-flow filtration. This reduction is associated with its presence in the juice cloud and pulp whose are concentrated in the retentate. The elimination of these compounds is transcendental to use lemon juice as an acidifier because they are responsible for aromatic degradation in processed food, as, for example, canned peach halves in syrup. Therefore, the use of cross-flow filtration in the clarification allows the use of lemon juice as acidulant in food with very sensitive flavors to degradation during processing and storage.

The volatile constituents of nine liverworts species (Asterella marginata, Dumortiera hirsuta, Fossombronia swaziensis, Marchantia pappeana, Marchantia polymorpha subsp. ruderalis, Pallavicinia lyellii, Plagiochasma rupestre, Riccia albolimbata and Symphyogyna podophylla) from South Africa were determined by gas chromatography. Where possible the volatile constituents identified were compared to those reported for the same species from other countries. Among the analysed liverworts, the chemical compositions of A. marginata, F. swaziensis, M. pappeana, and R. albolimbata are reported for the first time. Each of the analysed liverwort species produced its own characteristic components. Thujopsanes, chamigranes and cuparanes were found to be the most characteristic components of M. polymorpha subsp. ruderalis. The presence of dumortane-type sesquiterpenoids in D. hirsuta indicated that this species is similar in chemistry to an Argentinean sample. This is one of only a handful of reports on the presence of this sesquiterpene-type in liverworts. Simple thallose liverworts, S. podophylla and P. lyellii, were characterized by the presence of labdane-type diterpenoids. In addition, the antimicrobial activities of chloroform:methanol (1:1) extracts of the liverworts were evaluated against several important human pathogens using the serial dilution assay. Four of the liverwort species were active against Pseudomonas aeruginosa with MIC values ranging from 0.50 to 1.0 mg/mL. Some activity (MIC value of 1.0 mg/mL) was also recorded for the crude extracts of P. lyellii and M. pappeana against Escherichia coli. The extract of S. podophylla displayed the best activity towards the yeast Cryptococcus neoformans (MIC = 1.0 mg/mL). Although approximately 300 liverwort species occur in southern Africa, a Scopus search confirmed that this is the first report of the volatile profiles and biological properties of species from the region.

The volatile compounds in three Lang baijiu (?Honghualangshi, Y1?, ?Langjiulangge, Y2?, and ?Laolangjiu, Y3?) were identified by gas chromatography-olfactometry (GC-O), gas chromatography-mass spectrometry (GC?MS), flame photometric detection (FPD), and nitrogen phosphorus detector (NPD) with the aid of stir bar sorptive extraction (SBSE). The results showed that a total of 60, 62, and 61 compounds with aroma contribution were present in samples Y1, Y2, and Y3, respectively. Additionally, the odor activity value (OAV) was used to evaluate the important compounds. The results indicated that 2-methyl-3-furanthiol (OAV: 20?30), 3-mercaporhexyl acetate (OAV: 13?20), beta-damascenone (OAV: 30?57), (E)-2-nonenal (OAV: 9?22), heptanal (OAV: 4?13), hexanal (OAV: 9?12) and 2-isopropyl-3-methoxypyrazine (OAV: 4?14) contributed to the aroma of Lang baijiu. Finally, six compounds (ethyl hexanoate, 2-methyl-3-furanthiol, (E)-2-decenal, guaiacol, 3-mercaporhexyl acetate, and 2-isopropyl-3-methoxypyrazine) with different OAVs were used to determine the effect on the threshold of aromatic reconstitution (AR). It can be seen that ethyl hexanoate, 2-methyl-3-furanthiol, 3-mercaporhexyl acetate, and 2-isopropyl-3-methoxypyrazine could significantly decrease the threshold of AR. The possible reason was that these four compounds had synergistic effects with the aroma compounds in AR. Compared to ethyl hexanoate and 2-methyl-3-furanthiol, the threshold of AR had a slight difference in the presence of (E)-2-decenal in AR. After the addition of guaiacol, the threshold value of AR was significantly increased, indicating a masking effect between guaiacol and the original aroma compounds in AR.

In order to effectively deal with large amounts of complex organic pollutants in the harmful distillation residues with low energy consumption, a novel two-stage fluid-bed/fixed-bed system was designed to catalyze oxidation of acrylic acid production residue. The effects of fluid-bed temperature, gaseous hourly space velocity (GHSV), and oxygen excess rate on the purification of acrylic acid production residue in the two-stage fluid-bed/fixed-bed system were studied to prove the feasibility of the method. The chemical oxygen demand (COD) of the discharged liquid was <100 mg/L, and the volatile organic compounds (VOCs) of the discharged gas amounted to <10 mg/m3 with a fluid-bed temperature of 380C, emulsified residue's GHSV of 0.28 L/(kgcat·hr), and O2 excessive rate of more than 4.32. The result of techno-economics indicates the feasibility of the long-term operation of process. Results further illustrate the advantages of the proposed two-stage fluid-bed/fixed-bed system, which can treat acrylic acid production residue with high efficiency (COD < 100 mg/L, VOCs < 10 mg/m3) and low energy consumption (~24,856 kw·hr/ton) in the chemical industry. Practitioner points: A novel two-stage fluid-bed/fixed-bed system was developed for acrylic acid production residue treatment. No extra energy was required at low temperature in the two-stage fluid-bed/fixed-bed system. Purification of residue could be finished at low temperature by the catalytic pyrolysis and catalytic oxidation process. The two-stage system did not produce toxic gases and particulate matters.
